Mastering the Art of Grilling: Tips for Beginners
Grilling isn’t only for suburban dads in summer; it’s for anyone who appreciates being outdoors and loves smoky, crispy flavors on meats, vegetables, and fruits. However, cooking over open flames can seem daunting, even for seasoned home chefs. Jess Larson from Plays Well With Butter shares tips to improve your grilling skills.
Choosing the Right Grill
Most grills are either gas or charcoal. If convenience is your priority, a gas grill is ideal. These grills operate like kitchen stovetops, allowing quick and easy temperature control. According to Larson, this feature simplifies operation: “You just set the dials to whatever your recipe calls for.”
Charcoal grills deliver classic looks and flavors at a budget-friendly price. They offer smoky flavor and the iconic kettle appearance. But they require learning how to manage a fire, adding complexity.
Lighting Your Fire
For charcoal grills, Larson recommends using a charcoal chimney. This tool simplifies the process by lighting the coals effectively. Steps include removing the top grill grate, placing tinder at the bottom of the chimney, and pouring coals through the top. Light the tinder to heat the coals, which are ready when they turn dusty gray.
If using lighter cubes, these should be placed on the bottom grate before positioning the charcoal-filled chimney. Then, pour the heated coals into your grill. For gas grills, attach propane from a hardware store or connect the grill to a natural gas line.
Adjusting Heat Levels
Create temperature zones by stacking more coals for higher heat and fewer coals for lower heat. Use additional coals in a chimney to adjust heat levels. Opening vents can increase air flow, making coals burn hotter.
Larson offers advice for various meats: for chicken, start on lighter heat and finish on high for desired charred bits. Sear red meat or fish on high heat then lower the temperature. Use an oven thermometer for precise cooking.
Embracing Convenience
Larson emphasizes ease in grilling. Use tools like grill tongs, spatula, brush, and an instant-read meat thermometer to streamline the process. Lighter cubes, quick-light charcoal, or pre-marinated meats help eliminate tricky steps. Larson values having tools to ensure no overcooking, especially when grilling chicken.
Ensuring Safety
Safety is vital when grilling. Read the grill manual for setup guidelines, and avoid risky locations like near house walls or under patio roofs. Keep grills in open, airy spaces for proper heat dispersal.
If a fire appears uncontrollable, Larson advises closing the lid and vents to let it die out. Keep a fire extinguisher on hand as a precaution.
Practicing is key to mastering grilling, unlocking diverse flavors and making the experience enjoyable. Explore Larson’s grilling recipes on Plays Well With Butter or follow @playswellwithbutter on Instagram.
