- 1 cup blanched hazelnuts
- 1 cup Marcona almonds
- 3 tablespoons shallots, minced

- ½ cup sherry vinegar
- 1 cup piquillo peppers, chopped
- 2 teaspoons kosher salt
- 1 teaspoon sugar
- 1½ cups extra virgin olive oil
- 2 cups cherry tomatoes, halved
- 3 tablespoons Italian parsley, torn
Ingredients for Pompano:
- 6 fresh pompano fillets, 8 to 10 ounces, skin-on
- Kosher salt and black pepper
- 1½ cups homemade croutons
Instructions:
Heat oven to 400°F. Toast hazelnuts and almonds for 6 to 8 minutes. Cool and chop coarsely. Cook shallots, garlic, and chili flakes in a saucepan over medium-low heat. Add vinegar, peppers, salt, and sugar, bringing to a simmer. Gradually add olive oil. Simmer gently, adding tomatoes and parsley. Mix in toasted nuts. Grill seasoned pompano on clean, oiled grates at 500°F for several minutes, flipping to achieve cross-hatch marks. Serve with romesco and croutons.
