Bertrand Grébaut: A Revolutionary Chef Who Transformed French Cuisine
Bertrand Grébaut, the renowned French chef, made a significant impact on the culinary world with his famous restaurant, Septime. Known for its vegetable-focused dishes, Septime brought a fresh approach to French cuisine by mixing elements of formal haute cuisine with traditional bistro fare. Bertrand Grébaut’s innovative style influenced the direction of French cooking.
Born in France, Grébaut avoided the spotlight of social media, emphasizing the importance of enjoying shared moments around a table. He preferred to focus on the dining experience rather than photography, encouraging patrons to savor food and conversation.
Despite battling cancer since last fall, Grébaut continued to inspire with his culinary passion until his death on Thursday in Paris at 44. His passing was announced by his business partner, Théophile Pourriat, on the restaurant’s Instagram account.
Grébaut and Pourriat launched Septime in 2011, naming it after Monsieur Septime, a character portrayed by Louis de Funès in the film ‘Le Grand Restaurant.’ The choice of location for Septime was strategic, as it was situated on the Right Bank, away from the traditional dining spots of the Left Bank. This area, in the 11th arrondissement, was bustling with creative energy and offered Grébaut the freedom to experiment with his culinary ideas.
Septime opened during a time when American chefs were already exploring farm-to-table concepts, but French restaurants clung to traditional practices. Grébaut was among the new wave of chefs pushing boundaries, creating a dining experience that resonated with a diverse and open-minded crowd. He viewed this neighborhood with pride, feeling that it was a place where he could express his culinary vision.
