A chef from Cuba has rewritten culinary history in South Florida. Emelina, a restaurant in West Palm Beach, has achieved the distinction of being the first Cuban dining spot to earn a Michelin star. This accolade came just four months after the restaurant opened its doors.
The Vision of Osmel Gonzalez
Osmel Gonzalez, who co-owns the restaurant and serves as its chef, views this recognition as a broader opportunity. For him, it represents a platform to showcase Cuban cuisine reshaped by creative possibilities rather than limited by scarcity. Gonzalez expressed his joy upon receiving the Michelin star. He believes Emelina symbolizes a new chapter for Cuban flavors.
Named after his grandmother, the restaurant presents a modern twist on traditional Cuban dishes while honoring cultural roots. The focus remains on locally sourced ingredients that narrate a unique story. Dishes like poached local oysters with yucca foam exemplify the restaurant’s refined touch. Simpler ingredients such as cherry tomatoes with Cuban oregano chimichurri also stand out.

Dishes like Key West Pink Shrimp served with caimito reflect how Emelina embraces new interpretations of Cuban cuisine. The inclusion of beef is another notable feature; it was not commonly available in Cuba but holds a special place on the restaurant’s menu.

Emelina transports diners back to a time exiles fondly remember, before the political shifts in Cuba.
