L’Oca d’Oro’s Pay-What-You-Will Night Offers Accessible Dining
L’Oca d’Oro, an Italian restaurant in Austin, Texas, provides a unique promotion where diners pay what they wish for their meal. This weekly event allows visitors a chance to enjoy fine dining without financial strain. Sergio Flores captured the ambiance for NPR.
Zayed Al-Hamad and his party of four took full advantage of this offer. They ordered dishes like rosemary sourdough focaccia and rigatoni alla n’duja without worrying about the cost. For Al-Hamad, this night provided a rare opportunity to dine somewhere special without a hefty price tag.
Armand Daniels and Robin Wiley, who learned of this promotion via Instagram, considered this an ideal Valentine’s Day date. They enjoyed dishes like spinach salad and planned to determine their payment based on the final bill. Daniels noted the challenges of finding work as an actor and brand ambassador, making this option timely.
Following economic challenges, L’Oca d’Oro’s owners, Adam Orman and Fiore Tedesco III, decided to implement the pay-what-you-will nights in December. Rising food costs, tariffs, and a labor shortage contributed to this decision. They hope this initiative makes dining accessible to more people, counteracting the decline in traditional dining out.

Guests on Tuesday nights pay full price for drinks, but select their payment for food. A 20% service charge on the total supports staff wages and benefits. While such a practice might seem counterintuitive, Tedesco believes it’s essential to offer affordable dining during financially unstable times.
Market data reflect dining trends: A YouGov report indicated 37% of U.S. diners eat out less than before, citing high menu prices as a key reason. When eating out, takeout orders dominate, making up nearly three-quarters of meals per data from the National Restaurant Association.
Beyond food, restaurants serve as important social hubs, offering interaction vital for community connectivity. Anthropology professor Hanna Garth emphasized how dining out breaks routine and provides essential social interactions.
Regulars like Erin Weber and Michelle Valencia appreciate the pay-what-you-will concept for making excellent food accessible to diverse customers. Though they paid less than the bill’s full amount, they saw this as a way to support the restaurant’s vision.
Most diners at L’Oca d’Oro tend to pay about two-thirds of their usual food bill. While some guests pay less, others aim to cover their meals fully. On some nights, the restaurant even surpasses its regular revenue.
Zayed Al-Hamad acknowledged the unique opportunity to dine affordably and hopes his future support contributes to the sustainability of such initiatives. By continuing to offer pay-what-you-will nights, L’Oca d’Oro aims to maintain the community spirit and accessibility amidst economic challenges.
