Vegemite, a concentrated yeast extract, is a renowned Australian specialty originally derived from the by-product of beer brewing. For over a century, this sticky, salty condiment has been a staple in Australian breakfasts. Its significance is so profound that it is now at the center of a legal case. A convicted killer in Victoria is suing for the right to consume Vegemite in prison. Authorities have banned Vegemite in Victorian prisons, alleging that it can thwart dogs and assist in brewing alcohol.
The case, which involves claims of breached human rights, has reached Victoria’s Supreme Court. However, a ruling is yet to be made. Vegemite’s potent flavor has sparked debates about how much should be spread on toast. Cyril Callister, a food scientist, invented Vegemite post-World War I when the imported British yeast spread, Marmite, became scarce. His grandson, Jamie Callister, explains that novices should apply it sparingly, as too much can be overwhelming.
For Jamie, Vegemite evokes childhood memories of family meals. He recalls how his father would lavishly apply the spread, to his mother’s chagrin, much like others use tomato sauce. By the 1950s, a catchy TV jingle helped transform Vegemite into a household staple. Today, chefs are experimenting with Vegemite in diverse dishes, including pasta and curry.
In downtown Melbourne, bartender Kiamba Briscoe crafts a unique Vegemite cocktail at New Gold Mountain bar. Briscoe boils chardonnay until the alcohol evaporates, then mixes in Vegemite until it forms a uniform blend. This creation, resembling a dirty martini, aims to emulate the experience of eating Vegemite with buttered toast. Though intriguing, the Vegemite cocktail might not be a prison menu item soon.
